everywhere i look, someone is rejoicing over the fact that fall has indeed hit new york. on twitter, facebook, tumblr, and food blogs people are delighted that temperatures have dropped to scarf-friendly, pumpkin spice latte consuming, and leaf-changing weather. and okay, i know i'll be laughing in my UCLA sweats come winter when everyone on the east coast will be freezing their butts off and it's only 50 here, but right now, i seriously miss fall.
to ease the pain, i browsed food blogs over my morning coffee (with some added cinnamon in the filter. highly recommended) for fall recipes to incorporate some pumpkin from the giant can in my fridge right now. that thing took me 15 minutes to open, and incorrectly at that, because i could figure out how to use a can opener...not pretty. and kind of scary...
and then, i ate a hearty bowl of overnight oats that i prepared last night.
3/4 cup of oats, half a cup of pumpkin, and about 1/2 cup of liquids (almond milk, skim milk and water) with more almond milk, heaps of cinnamon and 2 teaspoons brown sugar added this morning. honestly, pumpkin is pretty much my favorite thing ever. i can't get over the fact that it's a vegetable, yet everything i make with him somehow tastes like dessert...and this bowl of oats was no exception. i have to admit, it was a little weird having a cold bowl of oats with such an autumn-y flavor, but i guess that's just the socal compromise i'm going to have to make.
it's back to work this morning and then some insanity + yoga this afternoon. catch ya later!
