if you've never heard of wheat berries, you'll need to try this salad immediately. it's sweet, nutty, healthy and filling all at the same time. wheat berries are the low-fat (150 calories per half cup) seed of a wheat plant and contain protein and fiber, as well as many vitamins and minerals such as calcium, iron and vitamin E.
to cook the wheatberries, simply place them in a saucepan filled with water. bring the water to boil and then cover and simmer for about an hour, or until the wheat berries crack open enough to be soft and chewy. you can put an exact amount of water in, like couscous, or just cook them until they taste good, like pasta!
i call this particular salad the super wheat berry salad because of all the other healthy toppings in it that contain protein (edamame), antioxidants (dried cranberries), fiber (dried figs), healthy fat (almonds) and vitamin A (carrots). here's the recipe:
1 cup cooked wheatberries
1/2 cup edamame
1/4 cup cranberries
10-15 chopped almonds
1/2 cup shredded carrots
1/2 cup chopped dried figs
1/4 cup chopped red onion
2-3 tablespoons balsamic vinaigrette
